Ingredients 

Main Ingredients

  • 1 cup dried black-eyed peas
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups vegetable broth
  • 1 teaspoon thyme
  • 1 teaspoon smoked paprika
  • to taste Salt and pepper
  • 2 tablespoon olive oil

Instructions 

  1. Soak black-eyed peas overnight or use quick soak method.
  2. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Sauté until softened.
  3. Add soaked black-eyed peas, diced tomatoes, vegetable broth, thyme, and smoked paprika. Bring to a boil.
  4. Reduce heat and simmer for 45 minutes or until peas are tender. Season with salt and pepper.
