Vegan Black-Eyed Pea Soup Recipe

Main Ingredients
- 1 cup dried black-eyed peas
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, chopped
- 2 stalks celery, chopped
- 1 can diced tomatoes (14.5 oz)
- 4 cups vegetable broth
- 1 teaspoon thyme
- 1 teaspoon smoked paprika
- to taste Salt and pepper
- 2 tablespoon olive oil
Soak black-eyed peas overnight or use quick soak method.
Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Sauté until softened.
Add soaked black-eyed peas, diced tomatoes, vegetable broth, thyme, and smoked paprika. Bring to a boil.
Reduce heat and simmer for 45 minutes or until peas are tender. Season with salt and pepper.
