  • 2 cups rolled oats
  • 1 cup almond milk
  • 2 bananas, mashed
  • 1 cup blueberries
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin or line with muffin liners.
  2. In a mixing bowl, combine the rolled oats and almond milk. Let it sit for 5 minutes.
  3. Add the mashed bananas, baking powder, vanilla extract, cinnamon, and salt to the oat mixture. Mix well.
  4. Gently fold in the blueberries.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
