Vegan Borscht Recipe

Main Ingredients
- 2 tablespoon Olive oil
- 1 large Onion, chopped
- 2 cloves Garlic, minced
- 3 medium Beets, peeled and grated
- 2 medium Carrots, peeled and grated
- 1 medium Potato, peeled and cubed
- 4 cups Vegetable broth
- 1 cup Cabbage, shredded
- 2 tablespoon Tomato paste
- 1 tablespoon Apple cider vinegar
- to taste Salt and pepper
- for serving Fresh dill, chopped
Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until soft.
Add grated beets and carrots, cook for about 10 minutes.
Add cubed potato, vegetable broth, and shredded cabbage. Bring to a boil, then reduce heat and simmer for 20 minutes.
Stir in tomato paste and apple cider vinegar. Season with salt and pepper to taste. Simmer for another 10 minutes.
Serve hot, garnished with fresh dill.
