Ingredients

  • 1 cup black beans cooked and drained
  • 1 cup diced tomatoes fresh or canned
  • 1 cup avocado diced
  • 1 cup spinach fresh
  • 4 large tortillas whole wheat or gluten-free
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 pinch salt to taste
  • 1 pinch black pepper to taste

Instructions 

  1. 1. Heat olive oil in a frying pan over medium heat.
  2. 2. Add black beans, cumin, chili powder, salt, and black pepper. Cook for 5 minutes.
  3. 3. Warm tortillas in a separate pan or microwave.
  4. 4. Assemble burritos by adding a portion of the bean mixture, diced tomatoes, avocado, and spinach to each tortilla.
  5. 5. Roll up the tortillas and serve immediately.
