Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups broccoli florets
  • 2 cups vegetable broth
  • 1 cup unsweetened almond milk
  • ½ cup nutritional yeast
  • Salt and pepper to taste

Instructions 

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Add broccoli and vegetable broth, bring to a boil.
  4. Reduce heat, cover, and simmer until broccoli is tender.
  5. Blend the soup until smooth.
  6. Stir in almond milk and nutritional yeast.
  7. Season with salt and pepper.
  8. Serve hot.
