Vegan Broccoli Cheddar Soup
A creamy and delicious vegan broccoli cheddar soup.

Main Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups broccoli florets
- 2 cups vegetable broth
- 1 cup unsweetened almond milk
- ½ cup nutritional yeast
- Salt and pepper to taste
Heat olive oil in a pot over medium heat.
Add onion and garlic, sauté until translucent.
Add broccoli and vegetable broth, bring to a boil.
Reduce heat, cover, and simmer until broccoli is tender.
Blend the soup until smooth.
Stir in almond milk and nutritional yeast.
Season with salt and pepper.
Serve hot.
