Ingredients

  • 1 head broccoli chopped
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • to taste salt
  • to taste pepper

Instructions 

  1. 1. In a pot, sauté the onion and garlic until soft.
  2. 2. Add the chopped broccoli and vegetable broth. Bring to a boil, then simmer for 15 minutes.
  3. 3. Blend the soup until smooth using a blender.
  4. 4. Stir in the coconut milk and season with salt and pepper to taste.
  5. 5. Serve hot.
