Ingredients 

Main Ingredients

  • 1 cup Quinoa cooked
  • 1 cup Chickpeas drained and rinsed
  • 1 cup Mixed Greens
  • 1 Avocado sliced
  • 1 cup Cherry Tomatoes halved
  • 1 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste

Instructions 

  1. 1. Cook the quinoa according to package instructions.
  2. 2. In a pan, heat the olive oil over medium heat and add the chickpeas. Cook for 5-7 minutes until slightly crispy.
  3. 3. In a bowl, combine the cooked quinoa, chickpeas, mixed greens, avocado, and cherry tomatoes.
  4. 4. Drizzle with lemon juice, and season with salt and black pepper. Toss everything together.
  5. 5. Serve immediately and enjoy!
