Main Ingredients
- 1 cup cooked black beans
- 1 cup cooked brown rice
- 1 avocado, sliced
- ½ cup salsa
- ½ cup corn kernels
- ¼ cup chopped cilantro
- 4 large flour tortillas
- Salt and pepper to taste
Warm the tortillas in a pan over medium heat.
In a bowl, mix the black beans, brown rice, corn, and cilantro. Season with salt and pepper.
Lay each tortilla flat and add a portion of the bean mixture.
Top with avocado slices and salsa.
Roll up the tortillas, tucking in the sides as you go.
Serve immediately.
