Vegan Butternut Curry Recipe
A hearty and flavorful vegan curry made with butternut squash.

Main Ingredients
- 1 medium butternut squash peeled and cubed
- 1 can coconut milk
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 medium onion chopped
- 2 cloves garlic minced
- 1 tablespoon olive oil
- 1 cup vegetable broth
- to taste salt and pepper
1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and sauté until softened.
2. Add curry powder, ground cumin, and ground coriander. Cook for another minute until fragrant.
3. Add cubed butternut squash, coconut milk, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until squash is tender.
4. Season with salt and pepper to taste. Serve hot.
