Ingredients 

Salad Ingredients

  • 1 head Romaine lettuce chopped
  • 1 cup Cherry tomatoes halved
  • 1 cup Croutons
  • ¼ cup Vegan Parmesan grated

Dressing Ingredients

  • ½ cup Cashews soaked
  • 2 tablespoon Lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic
  • 2 tablespoon Nutritional yeast
  • 2 tablespoon Olive oil
  • ¼ cup Water
  • Salt to taste
  • Pepper to taste

Instructions 

  1. In a blender, combine all dressing ingredients and blend until smooth.
  2. In a large bowl, toss the chopped romaine lettuce, cherry tomatoes, and croutons.
  3. Pour the dressing over the salad and toss to coat.
  4. Sprinkle with vegan Parmesan and serve.
