Vegan Caesar Salad Recipe
A delicious and healthy vegan Caesar salad.

Salad Ingredients
- 1 head Romaine lettuce chopped
- 1 cup Cherry tomatoes halved
- 1 cup Croutons
- ¼ cup Vegan Parmesan grated
Dressing Ingredients
- ½ cup Cashews soaked
- 2 tablespoon Lemon juice
- 1 teaspoon Dijon mustard
- 1 clove Garlic
- 2 tablespoon Nutritional yeast
- 2 tablespoon Olive oil
- ¼ cup Water
- Salt to taste
- Pepper to taste
In a blender, combine all dressing ingredients and blend until smooth.
In a large bowl, toss the chopped romaine lettuce, cherry tomatoes, and croutons.
Pour the dressing over the salad and toss to coat.
Sprinkle with vegan Parmesan and serve.
