  • ½ cup popcorn kernels
  • 1 cup brown sugar
  • ¼ cup coconut oil
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ½ teaspoon salt

Instructions 

  1. 1. Pop the popcorn kernels in a large pot over medium heat.
  2. 2. In a saucepan, combine brown sugar, coconut oil, and maple syrup. Bring to a boil.
  3. 3. Remove from heat and stir in vanilla extract, baking soda, and salt.
  4. 4. Pour caramel mixture over the popcorn and mix well.
  5. 5. Spread the popcorn on a baking sheet lined with parchment paper.
  6. 6. Bake at 250°F (120°C) for 20 minutes, stirring halfway through.
  7. 7. Let cool before serving.
