Vegan Carrot Curry Soup Recipe
A delicious and warming vegan carrot curry soup.

Main Ingredients
- 1 tablespoon Olive oil
- 1 medium Onion, chopped
- 3 cloves Garlic, minced
- 1 tablespoon Curry powder
- 1 lb Carrots, peeled and chopped
- 4 cups Vegetable broth
- 1 can Coconut milk
- to taste Salt and pepper
Heat olive oil in a pot over medium heat.
Add chopped onion and garlic, sauté until soft.
Stir in curry powder and cook for another minute.
Add chopped carrots and vegetable broth. Bring to a boil, then reduce heat and simmer until carrots are tender, about 20 minutes.
Remove from heat and blend the soup until smooth using a blender.
Return soup to the pot, stir in coconut milk, and season with salt and pepper to taste. Heat through before serving.
