Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 1 tablespoon Curry powder
  • 1 lb Carrots, peeled and chopped
  • 4 cups Vegetable broth
  • 1 can Coconut milk
  • to taste Salt and pepper

Instructions 

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion and garlic, sauté until soft.
  3. Stir in curry powder and cook for another minute.
  4. Add chopped carrots and vegetable broth. Bring to a boil, then reduce heat and simmer until carrots are tender, about 20 minutes.
  5. Remove from heat and blend the soup until smooth using a blender.
  6. Return soup to the pot, stir in coconut milk, and season with salt and pepper to taste. Heat through before serving.
