Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 lb carrots, peeled and chopped
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • to taste salt and pepper

Instructions 

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion and garlic, sauté until soft.
  3. Add chopped carrots, vegetable broth, cumin, and coriander. Bring to a boil.
  4. Reduce heat and simmer for 20-25 minutes until carrots are tender.
  5. Blend the soup until smooth. Season with salt and pepper to taste.
