Vegan Carrot Top Vegetable Soup Recipe

Main Ingredients
- 1 bunch carrot tops chopped
- 2 carrots sliced
- 1 potato diced
- 1 onion chopped
- 2 cloves garlic minced
- 4 cups vegetable broth
- 1 tablespoon olive oil
- Salt and pepper to taste
Heat olive oil in a pot over medium heat.
Add onion and garlic, sauté until translucent.
Add carrots, potato, and carrot tops. Cook for 5 minutes.
Pour in vegetable broth, bring to a boil.
Reduce heat and simmer for 20 minutes.
Season with salt and pepper.
Blend until smooth if desired.
