In a mixing bowl, combine coconut milk, peanut butter, soy sauce, maple syrup, curry powder, garlic powder, and ground ginger. Mix well to form the satay sauce.
Marinate the vegan chicken strips in half of the satay sauce for at least 15 minutes.
Preheat the grill to medium-high heat.
Grill the marinated vegan chicken strips for about 5 minutes on each side, or until slightly charred and heated through.
Serve the grilled vegan chicken strips with the remaining satay sauce on the side.
