Instructions
1. Preheat your grill to medium-high heat.
2. In a bowl, mix soy sauce, olive oil, maple syrup, minced garlic, and smoked paprika to make the marinade.
3. Add tofu cubes to the marinade and let it sit for at least 15 minutes.
4. Thread tofu, bell peppers, zucchini, and red onion onto skewers.
5. Grill the skewers for about 10-15 minutes, turning occasionally, until veggies are tender and tofu is slightly charred.
