Vegan Chickpeas with Kale and Cilantro Lime

Main Ingredients
- 2 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 can chickpeas, drained and rinsed (15 oz)
- 4 cups kale, chopped
- 1 cup vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 bunch cilantro, chopped
- 1 medium lime, juiced
- to taste salt and pepper
Heat olive oil in a skillet over medium heat. Add diced onion and cook until translucent, about 5 minutes.
Add minced garlic and cook for another minute.
Add chickpeas, chopped kale, vegetable broth, cumin, and paprika. Stir well to combine.
Cover and cook for 10-15 minutes, until the kale is tender.
Remove from heat and stir in chopped cilantro and lime juice. Season with salt and pepper to taste.
Serve warm.
