Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can chickpeas, drained and rinsed (15 oz)
  • 4 cups kale, chopped
  • 1 cup vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 bunch cilantro, chopped
  • 1 medium lime, juiced
  • to taste salt and pepper

Instructions 

  1. Heat olive oil in a skillet over medium heat. Add diced onion and cook until translucent, about 5 minutes.
  2. Add minced garlic and cook for another minute.
  3. Add chickpeas, chopped kale, vegetable broth, cumin, and paprika. Stir well to combine.
  4. Cover and cook for 10-15 minutes, until the kale is tender.
  5. Remove from heat and stir in chopped cilantro and lime juice. Season with salt and pepper to taste.
  6. Serve warm.
