Ingredients 

Main Ingredients

  • 2 cans young jackfruit drained and rinsed
  • 1 tablespoon olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 lime juiced
  • 8 small corn tortillas

Toppings

  • avocado
  • cilantro
  • red cabbage
  • lime wedges

Instructions 

  1. Heat olive oil in a pan over medium heat. Add onion and garlic, cook until softened.
  2. Add jackfruit, chili powder, cumin, smoked paprika, salt, and pepper. Cook for 10-15 minutes, stirring occasionally.
  3. Use a fork to shred the jackfruit in the pan. Add lime juice and cook for another 5 minutes.
  4. Warm tortillas in a separate pan or microwave.
  5. Assemble tacos with jackfruit mixture and desired toppings.
