Instructions
Heat olive oil in a pan over medium heat. Add onion and garlic, cook until softened.
Add jackfruit, chili powder, cumin, smoked paprika, salt, and pepper. Cook for 10-15 minutes, stirring occasionally.
Use a fork to shred the jackfruit in the pan. Add lime juice and cook for another 5 minutes.
Warm tortillas in a separate pan or microwave.
Assemble tacos with jackfruit mixture and desired toppings.
