Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Red Bell Pepper, chopped
  • 1 Green Bell Pepper, chopped
  • 1 cup Corn Kernels
  • 2 cans Diced Tomatoes
  • 1 can Black Beans, drained and rinsed
  • 1 can Kidney Beans, drained and rinsed
  • 2 tablespoon Chili Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 cup Vegetable Broth

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.
  2. 2. Add the chopped red and green bell peppers, and cook for another 5 minutes.
  3. 3. Stir in the corn, diced tomatoes, black beans, and kidney beans.
  4. 4. Add the chili powder, ground cumin, paprika, and salt. Mix well.
  5. 5. Pour in the vegetable broth, bring to a boil, then reduce the heat and let it simmer for 30 minutes.
  6. 6. Serve hot and enjoy!
