Ingredients 

Main Ingredients

  • 1 lb Tomatillos husked and rinsed
  • 2 Poblano peppers seeded and chopped
  • 1 Jalapeño pepper seeded and chopped
  • 1 Onion chopped
  • 3 cloves Garlic minced
  • 1 cup Vegetable broth
  • 2 cups Cooked white beans or canned, drained and rinsed
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried oregano
  • 1 tablespoon Olive oil
  • To taste Salt and pepper

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, and sauté until softened.
  2. 2. Add chopped tomatillos, poblano peppers, and jalapeño pepper to the pot. Cook for about 5 minutes, stirring occasionally.
  3. 3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes, until vegetables are tender.
  4. 4. Use a blender to puree the mixture until smooth. Return to the pot.
  5. 5. Add the cooked white beans, ground cumin, and dried oregano. Simmer for another 10 minutes.
  6. 6. Season with salt and pepper to taste. Serve hot.
