Vegan Chocolate Almond Butter Cups

- 1 cup dark chocolate chips
- 0.5 cup almond butter
- 2 tablespoon coconut oil
- 1 tablespoon maple syrup
- 0.5 teaspoon vanilla extract
- 1 pinch sea salt
Melt the chocolate chips and 1 tablespoon coconut oil in a double boiler or microwave until smooth.
In a separate bowl, mix almond butter, remaining coconut oil, maple syrup, vanilla extract, and sea salt until well combined.
Line a muffin tin with paper liners. Pour a spoonful of melted chocolate into each liner, spreading it to cover the bottom.
Add a spoonful of the almond butter mixture on top of the chocolate layer.
Cover the almond butter layer with another spoonful of melted chocolate.
Refrigerate for at least 1 hour or until set.
