Ingredients 

Scone Ingredients

  • 2 cups All-purpose flour
  • cup Sugar
  • 1 tablespoon Baking powder
  • ½ teaspoon Salt
  • ½ cup Vegan butter, cold and cubed
  • ¾ cup Non-dairy milk
  • 1 teaspoon Vanilla extract
  • 1 cup Vegan chocolate chips

Instructions 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the cold, cubed vegan butter to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
  4. Pour in the non-dairy milk and vanilla extract. Stir until just combined. Do not overmix.
  5. Fold in the vegan chocolate chips.
  6. Turn the dough out onto a lightly floured surface and shape it into a circle about 1-inch thick. Cut the dough into 8 wedges and place them on the prepared baking sheet.
  7. Bake for 20 minutes or until the scones are golden brown. Let cool slightly before serving.
