Scone Ingredients
- 2 cups All-purpose flour
- ⅓ cup Sugar
- 1 tablespoon Baking powder
- ½ teaspoon Salt
- ½ cup Vegan butter, cold and cubed
- ¾ cup Non-dairy milk
- 1 teaspoon Vanilla extract
- 1 cup Vegan chocolate chips
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
Add the cold, cubed vegan butter to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
Pour in the non-dairy milk and vanilla extract. Stir until just combined. Do not overmix.
Fold in the vegan chocolate chips.
Turn the dough out onto a lightly floured surface and shape it into a circle about 1-inch thick. Cut the dough into 8 wedges and place them on the prepared baking sheet.
Bake for 20 minutes or until the scones are golden brown. Let cool slightly before serving.
