- 1 cup Dark chocolate chips vegan
- ¼ cup Coconut milk full-fat
- 1 teaspoon Vanilla extract
- ¼ cup Cocoa powder for rolling
1. Melt the dark chocolate chips in a microwave or double boiler.
2. Stir in the coconut milk and vanilla extract until smooth.
3. Refrigerate the mixture for about 1 hour, or until firm.
4. Scoop out small amounts of the mixture and roll into balls.
5. Roll the truffles in cocoa powder to coat.
6. Store in the refrigerator until ready to serve.
