Ingredients

  • 1 ½ cups grated zucchini
  • 1 cup all-purpose flour
  • ½ cup whole wheat flour
  • ½ cup cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup vegetable oil
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • ¼ cup almond milk
  • 1 teaspoon vanilla extract
  • ½ cup vegan chocolate chips

Instructions 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, mix grated zucchini, oil, sugars, almond milk, and vanilla.
  3. In another bowl, whisk flours, cocoa powder, baking soda, baking powder, and salt.
  4. Combine wet and dry ingredients. Fold in chocolate chips.
  5. Pour batter into the loaf pan. Bake for 50 minutes or until a toothpick comes out clean.
  6. Let it cool before slicing.
