Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 large Onion, diced
  • 3 cloves Garlic, minced
  • 2 cups Mushrooms, chopped
  • 3 cups Potatoes, diced
  • 4 cups Vegetable Broth
  • 1 cup Coconut Milk
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add diced onion and minced garlic, sauté until translucent.
  3. 3. Add chopped mushrooms and cook until they release their moisture.
  4. 4. Add diced potatoes, vegetable broth, coconut milk, thyme, salt, and pepper. Bring to a boil.
  5. 5. Reduce heat and simmer for 20 minutes, or until potatoes are tender.
  6. 6. Use a potato masher to slightly mash some of the potatoes to thicken the chowder.
  7. 7. Serve hot and enjoy!
