Ingredients 

Main Ingredients

  • 200 g Pasta any type
  • 1 tablespoon Olive Oil
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 Red Bell Pepper chopped
  • 1 Zucchini chopped
  • 400 ml Coconut Milk
  • 2 tablespoon Curry Powder
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
  • 1 cup Spinach fresh

Instructions 

  1. 1. Cook the pasta according to the package instructions. Drain and set aside.
  2. 2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  3. 3. Add the minced garlic and cook for another minute.
  4. 4. Add the chopped red bell pepper and zucchini. Cook until the vegetables are tender.
  5. 5. Pour in the coconut milk and stir in the curry powder, salt, and black pepper. Bring to a simmer.
  6. 6. Add the cooked pasta and fresh spinach to the pot. Stir until the spinach is wilted and everything is well combined.
  7. 7. Serve hot and enjoy!
