Ingredients 

Main Ingredients

  • 1 block Tofu firm, drained and cubed
  • 1 tablespoon Coconut oil
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tablespoon Ginger minced
  • 1 tablespoon Curry powder
  • 1 can Coconut milk full-fat
  • 1 cup Vegetable broth
  • 1 cup Bell pepper sliced
  • 1 cup Carrot sliced
  • 1 cup Green beans trimmed
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. 1. Heat the coconut oil in a large pan over medium heat.
  2. 2. Add the chopped onion and sauté until translucent.
  3. 3. Stir in the minced garlic and ginger, cook for another minute.
  4. 4. Add the curry powder and cook for another minute.
  5. 5. Pour in the coconut milk and vegetable broth, bring to a simmer.
  6. 6. Add the cubed tofu, bell pepper, carrot, and green beans. Simmer for 15-20 minutes.
  7. 7. Season with salt and black pepper to taste.
  8. 8. Serve hot with rice or naan.
