Ingredients 

Main Ingredients

  • 1 cup red lentils
  • 1 can coconut milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 can diced tomatoes
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon chili flakes (optional)
  • Fresh cilantro for garnish

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Add garlic and ginger, cook for another minute.
  4. Stir in curry powder, turmeric, and cumin.
  5. Add lentils, diced tomatoes, coconut milk, and vegetable broth.
  6. Bring to a boil, then reduce heat and simmer for 25-30 minutes until lentils are tender.
  7. Season with salt and chili flakes.
  8. Garnish with fresh cilantro before serving.
