Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 pound asparagus trimmed and cut into 1-inch pieces
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • Salt and pepper to taste

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until softened.
  2. Add asparagus and cook for a few minutes until it turns bright green.
  3. Pour in vegetable broth and bring to a boil. Reduce heat and simmer until asparagus is tender, about 10 minutes.
  4. Use an immersion blender to puree the soup until smooth.
  5. Stir in coconut milk and season with salt and pepper. Heat through but do not boil.
