Main Ingredients
- 4 cups corn kernels fresh or frozen
- 2 cups vegetable broth
- 1 can coconut milk 13.5 oz
- 1 large potato diced
- 1 onion chopped
- 2 cloves garlic minced
- 1 red bell pepper chopped
- 1 teaspoon smoked paprika
- to taste salt and pepper
- 2 tablespoon olive oil
Heat olive oil in a pan, sauté onion, garlic, and red bell pepper until soft.
Add sautéed veggies, corn, potato, vegetable broth, coconut milk, and smoked paprika to the crockpot.
Season with salt and pepper.
Cook on low for 4 hours.
Blend half the soup for a creamy texture, then mix back into the crockpot.
Adjust seasoning if needed.
