Vegan Curried Cauliflower Sweet Potato Lentil Soup Recipe

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- ½ teaspoon ground turmeric
- ½ teaspoon ground coriander
- ¼ teaspoon cayenne pepper
- 1 large sweet potato, peeled and diced
- 1 small cauliflower, cut into florets
- 1 cup red lentils
- 4 cups vegetable broth
- 1 can coconut milk 14 oz
- Salt and pepper to taste
- Fresh cilantro for garnish
Heat olive oil in a large pot over medium heat. Add onion and cook until softened.
Add garlic, curry powder, cumin, turmeric, coriander, and cayenne pepper. Cook for 1 minute.
Add sweet potato, cauliflower, lentils, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
Stir in coconut milk and cook for another 10 minutes.
Season with salt and pepper. Garnish with fresh cilantro before serving.
