Main Ingredients
- 8 pieces Corn Tortillas
- 2 cups Black Beans cooked
- 1 cup Corn frozen or fresh
- 1 cup Red Enchilada Sauce
- 1 cup Vegan Cheese shredded
- 1 tablespoon Olive Oil
- 1 teaspoon Cumin
- 1 teaspoon Chili Powder
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- to taste Salt
- to taste Black Pepper
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine black beans, corn, olive oil, cumin, chili powder, garlic powder, onion powder, salt, and black pepper.
Fill each tortilla with the bean and corn mixture, then roll them up and place them seam-side down in a baking dish.
Pour the enchilada sauce over the rolled tortillas and sprinkle with vegan cheese.
Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
Serve hot and enjoy!
