Ingredients 

Main Ingredients

  • 2 tablespoon Olive oil
  • 1 Red bell pepper, sliced
  • 1 Yellow bell pepper, sliced
  • 1 Green bell pepper, sliced
  • 1 Red onion, sliced
  • 2 cloves Garlic, minced
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 can Black beans, drained and rinsed
  • 8 Tortillas
  • 1 Lime, cut into wedges
  • 1 cup Guacamole
  • 1 cup Salsa

Instructions 

  1. 1. Heat olive oil in a skillet over medium heat.
  2. 2. Add sliced bell peppers and onion. Cook until softened, about 5-7 minutes.
  3. 3. Add garlic, chili powder, cumin, paprika, salt, and black pepper. Stir well.
  4. 4. Add black beans and cook for another 5 minutes.
  5. 5. Warm tortillas in a separate pan or microwave.
  6. 6. Serve the vegetable mixture on tortillas. Top with guacamole, salsa, and a squeeze of lime.
