Ingredients

  • 1 cup Chickpea flour
  • 1 cup Water
  • 1 tablespoon Olive oil
  • 1 cup Chopped vegetables (bell peppers, onions, spinach)
  • 1 teaspoon Salt
  • 1 teaspoon Turmeric
  • 1 teaspoon Baking powder

Instructions 

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. In a mixing bowl, whisk together chickpea flour, water, olive oil, salt, turmeric, and baking powder until smooth.
  3. 3. Stir in the chopped vegetables.
  4. 4. Heat a skillet over medium heat and add a little olive oil to coat the bottom.
  5. 5. Pour the batter into the skillet and cook for about 5 minutes, until the edges start to set.
  6. 6. Transfer the skillet to the oven and bake for 25 minutes, or until the frittata is firm and golden.
  7. 7. Let it cool slightly before slicing and serving.
