Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 stalks celery, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon smoked paprika
  • ¼ teaspoon red pepper flakes
  • 4 cups vegetable broth
  • 2 cans garbanzo beans, drained and rinsed
  • 1 can diced tomatoes
  • Salt and pepper to taste
  • 2 cups spinach, chopped
  • 1 Juice of 1 lemon

Instructions 

  1. Heat olive oil in a pot over medium heat. Add onion, garlic, carrots, and celery. Cook until vegetables are softened.
  2. Add cumin, coriander, smoked paprika, and red pepper flakes. Stir for 1 minute.
  3. Pour in vegetable broth, garbanzo beans, and diced tomatoes. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Season with salt and pepper. Stir in spinach and cook until wilted. Add lemon juice before serving.
