  • 1 cup Gluten-free flour
  • ½ cup Coconut sugar
  • ½ cup Coconut oil, melted
  • 1 teaspoon Vanilla extract
  • ½ teaspoon Baking soda
  • ¼ teaspoon Salt
  • 1 cup Vegan chocolate chips

Instructions 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the gluten-free flour, coconut sugar, baking soda, and salt.
  3. Add the melted coconut oil and vanilla extract to the dry ingredients. Mix until well combined.
  4. Fold in the vegan chocolate chips.
  5. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes, or until the edges are golden brown.
  7. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
