Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 500 g mushrooms, sliced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • Salt and pepper to taste

Instructions 

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Add mushrooms, thyme, and rosemary. Cook until mushrooms are tender.
  4. Pour in vegetable broth, bring to a boil, then simmer for 20 minutes.
  5. Stir in coconut milk, season with salt and pepper.
  6. Blend the soup until smooth.
  7. Serve hot.
