Instructions
Heat olive oil in a pot over medium heat.
Add onion and garlic, sauté until translucent.
Add mushrooms, thyme, and rosemary. Cook until mushrooms are tender.
Pour in vegetable broth, bring to a boil, then simmer for 20 minutes.
Stir in coconut milk, season with salt and pepper.
Blend the soup until smooth.
Serve hot.
