Ingredients 

Main Ingredients

  • 500 g Gnocchi store-bought or homemade
  • 2 cups Fresh Spinach
  • 1 can Cannellini Beans drained and rinsed

Pesto

  • 2 cups Fresh Basil
  • ½ cup Olive Oil
  • ¼ cup Nutritional Yeast
  • 2 cloves Garlic minced
  • ¼ cup Pine Nuts toasted
  • 1 tablespoon Lemon Juice freshly squeezed
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper

Instructions 

  1. 1. Cook the gnocchi according to the package instructions. Drain and set aside.
  2. 2. In a blender, combine basil, olive oil, nutritional yeast, garlic, pine nuts, lemon juice, salt, and pepper. Blend until smooth to make the pesto.
  3. 3. In a large skillet, sauté the spinach until wilted.
  4. 4. Add the cannellini beans and cooked gnocchi to the skillet. Stir in the pesto and mix well.
  5. 5. Serve hot and enjoy!
