Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 cup Onion, chopped
  • 1 cup Bell Pepper, chopped
  • 1 cup Celery, chopped
  • 3 cloves Garlic, minced
  • 1 cup Okra, sliced
  • 1 can Diced Tomatoes (14.5 oz)
  • 4 cups Vegetable Broth
  • 2 teaspoon Thyme dried
  • 2 teaspoon Paprika
  • 1 teaspoon Cayenne Pepper
  • 2 cups Cooked Rice

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add chopped onion, bell pepper, and celery. Cook until softened, about 5 minutes.
  3. 3. Stir in minced garlic and sliced okra. Cook for another 5 minutes.
  4. 4. Add diced tomatoes, vegetable broth, thyme, paprika, and cayenne pepper. Bring to a boil.
  5. 5. Reduce heat and simmer for 30 minutes, stirring occasionally.
  6. 6. Serve hot over cooked rice.
