- 2 tablespoon Olive Oil
- 1 cup Onion, chopped
- 1 cup Bell Pepper, chopped
- 1 cup Celery, chopped
- 3 cloves Garlic, minced
- 1 cup Okra, sliced
- 1 can Diced Tomatoes (14.5 oz)
- 4 cups Vegetable Broth
- 2 teaspoon Thyme dried
- 2 teaspoon Paprika
- 1 teaspoon Cayenne Pepper
- 2 cups Cooked Rice
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion, bell pepper, and celery. Cook until softened, about 5 minutes.
3. Stir in minced garlic and sliced okra. Cook for another 5 minutes.
4. Add diced tomatoes, vegetable broth, thyme, paprika, and cayenne pepper. Bring to a boil.
5. Reduce heat and simmer for 30 minutes, stirring occasionally.
6. Serve hot over cooked rice.
