Cupcake Batter
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ¼ cup cocoa powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup water
- ⅓ cup vegetable oil
- 1 tablespoon white vinegar
- 1 teaspoon vanilla extract
- Vegan frosting of choice
Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
Add water, vegetable oil, vinegar, and vanilla extract. Mix until smooth.
Divide batter evenly among cupcake liners.
Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
Let cool completely before frosting with vegan frosting.
