Ingredients

  • 1 can Hearts of Palm drained and chopped
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • ¼ cup Red Onion finely chopped
  • ¼ cup Cilantro chopped
  • 2 tablespoon Lime Juice freshly squeezed
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black Pepper freshly ground

Instructions 

  1. 1. In a large mixing bowl, combine hearts of palm, cherry tomatoes, cucumber, red onion, and cilantro.
  2. 2. Add lime juice, olive oil, salt, and black pepper. Mix well.
  3. 3. Let the mixture sit for at least 10 minutes to allow the flavors to meld together.
  4. 4. Serve chilled as an appetizer or a light meal.
