Ingredients 

Main Ingredients

  • 1 tablespoon Vegetable oil
  • 1 cup Shiitake mushrooms, sliced
  • 1 cup Carrots, julienned
  • 1 cup Bamboo shoots, sliced
  • 4 cups Vegetable broth
  • 1 tablespoon Soy sauce
  • 2 tablespoon Rice vinegar
  • 1 tablespoon Chili paste
  • 1 tablespoon Cornstarch mixed with 2 tablespoon water
  • 1 block Firm tofu, cubed
  • 2 tablespoon Green onions, chopped

Instructions 

  1. Heat the vegetable oil in a pot over medium heat.
  2. Add the shiitake mushrooms, carrots, and bamboo shoots. Cook for 5 minutes.
  3. Pour in the vegetable broth, soy sauce, rice vinegar, and chili paste. Bring to a boil.
  4. Stir in the cornstarch mixture and cook until the soup thickens.
  5. Add the tofu and cook for another 5 minutes.
  6. Garnish with green onions before serving.
