Instructions
Heat the vegetable oil in a pot over medium heat.
Add the shiitake mushrooms, carrots, and bamboo shoots. Cook for 5 minutes.
Pour in the vegetable broth, soy sauce, rice vinegar, and chili paste. Bring to a boil.
Stir in the cornstarch mixture and cook until the soup thickens.
Add the tofu and cook for another 5 minutes.
Garnish with green onions before serving.
