Ingredients 

Main Ingredients

  • 1 cup red lentils
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, chopped
  • 1 stalk celery, chopped
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon turmeric
  • Salt and pepper to taste
  • 2 tablespoon olive oil

Instructions 

  1. Set Instant Pot to sauté mode. Add olive oil, onion, and garlic. Sauté until onion is translucent.
  2. Add carrot and celery. Cook for another 2-3 minutes.
  3. Add red lentils, diced tomatoes, vegetable broth, cumin, coriander, turmeric, salt, and pepper. Stir well.
  4. Close the lid and set the Instant Pot to manual high pressure for 10 minutes.
  5. Once done, allow natural release for 10 minutes, then quick release any remaining pressure.
  6. Open the lid, stir the soup, and adjust seasoning if needed.
