  • 1.5 kg Potatoes peeled and cubed
  • 1 cup Cherry tomatoes halved
  • 1 cup Cucumber diced
  • 0.5 cup Red onion thinly sliced
  • 0.25 cup Olive oil
  • 2 tablespoon Red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Fresh basil chopped

Instructions 

  1. 1. Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and let cool.
  2. 2. In a large mixing bowl, combine the olive oil, red wine vinegar, Dijon mustard, dried oregano, salt, and black pepper. Whisk until well combined.
  3. 3. Add the cooled potatoes, cherry tomatoes, cucumber, red onion, and fresh basil to the bowl. Toss gently to coat everything in the dressing.
  4. 4. Serve immediately or refrigerate for an hour to let the flavors meld together.
