Ingredients 

Main Ingredients

  • 2 cans Young Jackfruit drained and rinsed
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 1 tablespoon Ginger grated
  • 2 tablespoon Curry Powder
  • 1 teaspoon Turmeric
  • 1 teaspoon Cumin
  • 1 can Coconut Milk
  • 1 cup Vegetable Broth
  • 1 tablespoon Soy Sauce
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
  • 1 cup Frozen Peas
  • 1 handful Cilantro chopped, for garnish

Instructions 

  1. 1. Heat oil in a large pot over medium heat. Add chopped onion and cook until translucent.
  2. 2. Add minced garlic and grated ginger, cook for another minute.
  3. 3. Stir in curry powder, turmeric, and cumin. Cook for 2 minutes.
  4. 4. Add jackfruit, coconut milk, vegetable broth, soy sauce, salt, and pepper. Bring to a simmer.
  5. 5. Cover and cook for 20 minutes, stirring occasionally.
  6. 6. Add frozen peas and cook for another 5 minutes.
  7. 7. Garnish with chopped cilantro and serve hot.
