Instructions
1. Heat oil in a large pot over medium heat. Add chopped onion and cook until translucent.
2. Add minced garlic and grated ginger, cook for another minute.
3. Stir in curry powder, turmeric, and cumin. Cook for 2 minutes.
4. Add jackfruit, coconut milk, vegetable broth, soy sauce, salt, and pepper. Bring to a simmer.
5. Cover and cook for 20 minutes, stirring occasionally.
6. Add frozen peas and cook for another 5 minutes.
7. Garnish with chopped cilantro and serve hot.
