Vegan Jalapeno Cornbread Recipe
A delicious vegan cornbread with a spicy kick from jalapenos.

Main Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 cup almond milk
- ¼ cup vegetable oil
- ¼ cup maple syrup
- 1 cup corn kernels (fresh or frozen)
- 2 jalapenos, diced
Preheat oven to 400°F (200°C).
In a large bowl, mix cornmeal, flour, baking powder, and salt.
In another bowl, combine almond milk, vegetable oil, and maple syrup.
Add wet ingredients to dry ingredients and mix until just combined.
Fold in corn kernels and diced jalapenos.
Pour batter into a greased 9-inch baking dish.
Bake for 25 minutes or until a toothpick comes out clean.
