Vegan Jicama Ceviche Recipe

Main Ingredients
- 2 cups jicama, diced
- 1 cup tomato, diced
- 1 cup cucumber, diced
- ½ cup red onion, finely chopped
- ¼ cup cilantro, chopped
- 2 limes, juiced
- 1 teaspoon salt
- 1 jalapeño, finely chopped (optional)
In a large mixing bowl, combine the diced jicama, tomato, cucumber, red onion, and cilantro.
Add the lime juice and salt. Mix well to combine.
If using, add the finely chopped jalapeño for a spicy kick. Mix again.
Let the ceviche sit for about 10 minutes to allow the flavors to meld. Serve immediately.
