Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 can chickpeas, drained and rinsed (15 oz)
  • 4 cups vegetable broth
  • 1 bunch kale, stems removed and chopped
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Stir in the minced garlic, ground cumin, and ground coriander. Cook for another minute.
  4. Add the chickpeas and vegetable broth. Bring to a boil, then reduce the heat and simmer for 15 minutes.
  5. Add the chopped kale and cook until wilted, about 5 minutes.
  6. Season with salt and black pepper to taste. Serve hot.
