Main Ingredients
- 2 tablespoon Coconut Oil
- 1 medium Onion, diced
- 3 cloves Garlic, minced
- 1 tablespoon Ginger, minced
- 2 tablespoon Yellow Curry Paste
- 1 can Coconut Milk
- 1 cup Vegetable Broth
- 1 medium Zucchini, chopped
- 1 medium Red Bell Pepper, chopped
- 1 cup Broccoli Florets
- to taste Salt
- to taste Black Pepper
- 1 tablespoon Lime Juice
- 1 tablespoon Fresh Cilantro, chopped
1. Heat coconut oil in a large pot over medium heat.
2. Add diced onion and sauté until translucent.
3. Stir in minced garlic and ginger, cook for another minute.
4. Add yellow curry paste and cook for 2 minutes, stirring constantly.
5. Pour in coconut milk and vegetable broth, bring to a simmer.
6. Add zucchini, red bell pepper, and broccoli. Cook until vegetables are tender.
7. Season with salt and black pepper to taste.
8. Stir in lime juice and garnish with fresh cilantro before serving.
