Ingredients 

Main Ingredients

  • 2 cups cooked rice preferably day-old
  • 1 cup kimchi chopped
  • 1 tablespoon kimchi juice
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic minced
  • 1 cup mixed vegetables carrots, peas, corn, etc.
  • 2 stalks green onions chopped
  • 1 tablespoon gochujang optional, for extra spice

Instructions 

  1. 1. Heat sesame oil in a wok or large skillet over medium heat.
  2. 2. Add minced garlic and cook until fragrant, about 1 minute.
  3. 3. Add chopped kimchi and mixed vegetables. Stir-fry for 3-4 minutes.
  4. 4. Add cooked rice, kimchi juice, soy sauce, and gochujang (if using). Stir well to combine.
  5. 5. Cook for another 5-7 minutes, stirring occasionally, until everything is heated through.
  6. 6. Garnish with chopped green onions and serve hot.
